Kokorec is a typical Turkish dish made of seasoned, skewered lamb intestines. If you like to taste kokorec, you can find it in street vendors and some specialized restaurants only. It is really delicious for many people and it has a long and important process of washing and cleaning. For kokorec, intestines of suckling lambs are most favored. Turks roll lamb or mutton intestines around a skewer and grill it horizontally on a charcoal fire. After grilling, they are chopped and seasoned with salt, pepper, cumin and oregano, and served on bread.
Before you say yuck, you have to taste this Turkish delicacy that is available in everywhere in Turkey and especially look for Sampiyon Kokorec, a well-loved chain found in many Turkish cities. If Turkey would join the EU, it will not be allowed to serve Kokorec as it is counted as offal.
