Kebab is a traditional Turkish dish but making kebab at home is not generally workable so all over Turkey you can see many kebab restaurants.
Kebab is a meat grilled or stewed on a skewer. The meat used for making kebabs may be lamb, beef or chicken, but not pork, because Turkey is a Muslim country, pork is not usually an option.
The fire is not supposed to touch the meat because of this the grilling process is an art. The most famous kebab types are shish kebab and doner kebab, shish kebab served on the skewer and cubes of vegetables such as eggplant, tomato, bell pepper, onions and mushrooms etc are often threaded on the skewer as well, doner kebab means rotating kebab, served wrapped in bread with a salad and dressing or served in a dish with a salad and bread or potatoes and rice on the side. Mainly two sauces are available for kebab, a yoghurt sauce and a hot sauce.
Turkish people like to enjoy a fiery glass of Raki with their doner kebab. Iskender kebab is a kind of doner kebab prepared from thinly cut grilled meat basted with tomato sauce over pieces of pide bread with melted butter and yogurt.
In also many European countries, Canada, New Zealand and Australia kebab is well known and popular.
